I’m currently recovering from my Paratyroidectomy. Essentially, I’ve had a growth removed from my parathyroid, I had no clue we had parathyroids either! The growth wreaked havoc on my body the last nine months, with me spending a lot of time in bed ill.
One of the few things that I’ve still been able to enjoy is food. However, I’ve not always had the energy to cook big meals, or some of my usual comfort foods due to major fatigue. So I had to adapt to make low effort and quick foods or snacks. Among these are some quick and easy crumpet recipes, well toppings.
Cheese & Marmite Crumpet Topping
Ingredients
- Hovis Crumpets
- Butter
- Marmite
- Grated Mature Cheddar Cheese
Ok, so there are two controversial things about this crumpet recipe – number 1, Marmite – as the saying goes, “You either love it or you hate it”. Number 2, unlike most crumpet recipes, I cooked it in the air-fryer, rather then the usual toaster method, because I want my cheese properly melted.
To make this yummy snack, simply butter your crumpet and add your preferred amount of Marmite. I love Marmite so I put a good thick spread of it on. Then simply top with some grated cheese – I chose Mature Cheddar, as I love the combination of the strong flavour mix. Then simply put it in the air-fryer until the cheese is sufficiently melted.
Almond butter, Banana and Agave Nectar Crumpet Recipe
Ingredients
- Hovis Crumpets
- Almond Butter (but you can use any type of Nut Butter)
- Banana
- Agave Nectar (but can be substituted for honey or maple syrup)
When I’ve been craving something sweet, this has really hit the spot, and isn’t too unhealthy, compared to binge eating ice cream on my bad health days. This one is really straight forward, toast your crumpet, spread on your nut-butter, sliced banana and drizzle with Agave Nectar, honey or maple syrup. You could also make it more bougie by sprinkling desiccated coconut or chopped nuts over the top. This crumpet recipe is quiet versatile, because you could also swap the banana out for strawberries or even sliced apple.
